From Watford to Shoreditch: Pizza Pioneer Vincenzo’s Brings NYC Slice Culture to East London

Pioneers of London’s own style and cult favourite, Vincenzo’s, is opening a slice shop this November on Bethnal Green Road, Shoreditch. Founded by Tom Vincent in 2022, Vincenzo’s quickly made its mark with its crispy, thin-crust whole pies. Now, they are bringing New York’s pizza-by-the-slice culture with its nostalgic, late-night energy to the capital. Vincenzo’s new shop will offer Londoners a new way to experience pizza – fresh, hot, generous slices available to grab-and-go from 5pm till late. 

The new shop marks an exciting evolution for Vincenzo’s. While the Bushey original became famous for its whole pies, the new site is dedicated to pizza by the slice – a style made for the fast pace of East London. Slices start at just £5, with classics like Margherita, Tomato, and Pepperoni sitting alongside inventive new flavours such as Spanakopita, Vodka Sauce, and Burrata. Customers can customise their order with indulgent extras, including hot honey, burrata, and fresh pesto. Each slice is cut from a generous 20” pie, while whole 16” pies will also be available for takeaway. A selection of soft drinks keeps the offer simple and refreshing.

Ingredients are at the heart of the Vincenzo’s experience, and for Tom, they are the secret to an incredible pie. Dough is made using flour from Molino Casillo in Puglia, the sauce from the finest San Marzano tomatoes, and cheese supplied by Latteria Sorrentina, an Italian producer trusted by generations of pizzaiolos, ensuring every slice carries the same flavour and craftsmanship that first set Vincenzo’s apart.

The Shoreditch shop channels the nostalgic feel of New York slice bars with an East London edge. A traditional Victorian shopfront opens onto a warm, characterful interior with nods to both Italian delis and mid-century design. Mahogany-coloured wall panelling complements green-and-white mosaic marble floors from Starel Stone Tiles and Levento Rosso marble countertops. A coffered ceiling with detailed cornicing adds elegance, while bespoke joinery and carefully chosen Pholc lighting complete the space. A curated mix of oil paintings, mid-century artworks, and vintage photos gives the restaurant a nostalgic but polished finish that echoes the spirit of the original Bushey shop while elevating it for Shoreditch. The focus is on grab-and-go slices, but there will be some seats available for those who prefer to eat in.

“Pizza is simple: dough, sauce and cheese, but the slice shop is about more than that,” founder Tom Vincent comments. “It’s the smell, the art, the queue, the first bite. Shoreditch will carry the same nostalgia as Watford, but in a space that feels bigger, bolder, and built for London. We’re not chasing hype, we’re creating something timeless. A slice shop London can call its own.

Growing up in Watford, Tom worked in kitchens at the age of just 14, but the obsession with pizza came later. After building his own brick oven at home, he delved into the world of pizzamaking, and friendships with New York slice legends such as Gio Lanzo of Luigi’s Pizza and Frank Pinello of The Pizza Show deepened his connection to the culture. In 2022, he opened the first Vincenzo’s in Bushey – a tiny, matchbox-sized spot with just a few tables and a bench outside. Despite its modest setting, it drew queues for its crispy pizza, simple but effective menu, and sought-after specials that became fan favourites. Word spread quickly, and despite its less-than-central location, Vincenzo’s established itself as a destination that could rival London’s best-known pizzerias. With the new Shoreditch shop, the ethos remains unchanged: a taste-first, experience-led concept with community at its core, driven by Tom’s creative and culinary vision and built to stand the test of time.
