The Sweet Taste of Sustainability: Shaping Luxury at The Highfield

Set within the rolling landscapes of the East Yorkshire Wolds, The Highfield is redefining modern British country-house hospitality. Originally built in 1864 and thoughtfully reimagined in 2022 by international design duo Andy and Lindsey Lampard, this award-winning retreat offers an intimate, design-led experience where heritage, craftsmanship and environmental responsibility meet every step of the way.

At the heart of The Highfield’s ethos is a partnership that predates the sustainability movement by decades. For over 50 years, local beekeeper Frank Meek of East Yorkshire Honey has tended beehives on the estate. Long before “farm-to-table” became an industry buzzword, the honey produced here was part of everyday life, featured across the house, in the shop, and now on the menus at the resident AA-awarded restaurant, The Mill & Vine, and in local stores beyond.

And the honey is just one part of a wider story of care and responsibility at The Highfield. The house also has on-site recycling, food composting, energy-efficient heating and lighting, no single-use plastics in guest rooms, and furniture sourced or restored by local craftsmen. Even the estate itself forms part of the design narrative. Fallen trees more than 200 years old have been repurposed into tabletops, shelving and terrace furniture, embedding the grounds directly into the interiors.

Co-owner and international interior designer Andy Lampard explains: “We wanted to create a place where heritage, our passion for arts, comfort, and sustainability naturally sit together. Every decision, from the materials we use to the experiences we offer, are meant to reflect our respect for the house, the landscape, and the local community as well as the history of the place.”

Looking ahead, The Highfield continues to deepen its regional connections and environmental commitments, evolving not through expansion, but through a passion for art, history and nature, enhancing guest experience while preserving what makes the house distinctive.

Lindsey – also an international interior designer – adds: “We love how The Highfield is a quietly confident luxury retreat that honours the past, embraces the present and looks thoughtfully to the future. This is something we have always championed with conviction!”
